Recipes from Paxi


Scorpion fish bourdeto

Ingredients:

  • 1 cup olive oil
  • 2 onions cut in rings
  • 1 teaspoon red pepper
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • 2 cloves garlic
  • 2 scorpion fishes 1 ½-2 kg

Execution:

Sauté the onions in the olive oil in a big pot. Colour the oil by adding paprika and pepper. Add in the tomato paste, the garlic and one cup of water. Clean the fishes carefully. After almost 20 minutes and after the sauce is set put the fishes in the pot. Add salt and pepper and pour ½ cup of water. Cook over medium fire for 15 minutes and add some hot water if needed.

 

Savouro

Ingredients:

  • 1 kg bogues or big picarel
  • Oil
  • Vinegar
  • Some sugar
  • A lot of garlic
  • Rosemary
  • Black raisins
  • Flour for frying

Execution:

Clean well the fish, rinse them out and salt them in a strainer to strain. Flour them, fry them and leave them aside. In the frying pan oil add vinegar, sugar, a loti of chopped garlic, grounded rosemary and black raisins. Add water and boil until it sets completely. Put the fish and sauce in a clay vase. The sauce must be cool and must cover all the fish.
